Oatmeal Walnut Cookies
I made this cookie to give out to the the basketball players when I interviewed them as a correspondent of The Tonight Show at the NBA finals on June 7th. This is an easy cookie to make and so delicious.
Ingredients:- Dough

- 1 cup butter
- 1 cup brown sugar, firmly packed
- 1 cup granulated sugar
- 1 teaspoon vanilla
- 2 eggs
- 1-3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups quick cooking oatmeal
- 1 cup chopped walnuts
In a large electric mixing bowl, place butter, sugars, vanilla and eggs. Beat together until a creamy mixture. Sift flour with soda and salt and add on low speed to butter mixture. Add oatmeal and walnuts and combine well. Refrigerate dough for easier handling. Form into balls the size of walnuts. Place 2 inches apart on greased cookie sheets. Bake at 400 degrees for 8 to 10 minutes. Cool on wire rack.
Makes 5 dozen cookies.
